    Another Lebanese dish that I started having when I worked in this halal cafe where the chef was Lebanese - Foul Mudammas, basically a hot dish comprising of fava beans and a few other ingredients, but is eaten with a variety of fresh veggies for breakfast. It's a really filling meal that you'll find in breakfast buffets in the middle east. It's kind of a whole experience on its own.

    Last I'll give you a recipe for this yogurt dish that I had at a friend's house once and loved it ever since. I don't know what it's called but it's similar to Tzatziki, but not. So it's basically plain yogurt with added finely diced cucumber, DRIED mint (that's important), a little ground garlic (raw) or garlic powder, black pepper and salt, and perhaps a tiny bit of lemon but that's optional. Sometimes when I buy a container of plain yogurt I'll make the whole thing into this and finish the whole thing in like 2 days.

    Another salad you might know of which is pretty commonplace, is Tabooli, which is a parsley and mint salad. Soooo refreshing~

    Next, the national dish of Egypt - Koshari. It's like this comforting side dish that I sometimes eat on its own which is like a strange mishmash of rice, lentils, and pasta. It sounds strange but it's really lovely.

    Then there's Afghan Mantoo, a middle eastern ravioli type thing. I've never made it but I love eating it.

    Something else I love is Zaatar, it's an oregano-thyme-sumac spice blend that you can buy already mixed in packages, and then you mix a spoon or two with a little bit of olive oil and spread it over pita, then bake it for a minute or two until the flavours mix. I can't describe the taste to you but it's one of my favourite breakfast or snack items.

    Also using sumac is one of my favourite salads, Fatoosh, which has deep fried pieces of pita in it. LOVE IT.

    Ok so one middle eastern dish I love to death is Kabuli Pulao, it's a rice & meat dish which is topped with carmelized onions and carrot strips on top along with raisins and sometimes almond slivers.

    Then of course is cooking shawarma style meat, I like seasoning chicken and either pan frying it or baking it and making shawarma sandwiches, it's delicious! Here's the spice mix that I usually use, and once you have the spices all ground you add a few tablespoons of yogurt, olive oil, and squeeze of lemon and marinade your chicken/beef for a couple hours or overnight. Deeeeelish~ In my opinion pickled turnip is a must-add to shawarma sandwiches in pita.

    Lol! Nah it's a cultural thing, even myself growing up with Caribbean food, there's never anything not well done, so I had to get used to like medium steaks or whatever. I still prefer well done though, just how I grew up.

    Hmmm if they're not picky eaters, then why not just go with your specialities using chicken or beef and no wine or alcohol in the sauces?
    I could give you ideas for typical middle eastern meals but if I were them, I would want to try what you are used to making. The only caution I'd give you is that typically, middle easterners are not into meat that's not well done, but that's a generalization for sure.

    Do you have anything in mind already? If not and you actually want to try making middle eastern dishes I'll give you a few names of things :)
