Umm, I think him blocking Akainu's Magma fist to try and save Luffy and Ace back at the Marineford arc pretty much covered that-v-;;.

fishman karate uses the water in the air to hurt devil fruit uses he did the same to luffy but people that skipped the fishman island arc would not know that i guess!

So here's a question. Brook's soul temporarily left him on the panel just before the door was cut. He probably did this to protect his body from dying if it slammed into the door.

If his host body was crushed/"died", could he have taken over another body to continue living?

I believe fishman karate alone wouldn't hurt a logia user. It hurt Luffy because he still has water inside his body despite being a rubber man, but a logia user's body is entirely the element or at least can be, which Caribou is shown be in his elemental state partially. So yes I do believe Jinbei was using haki.

caribou is a swamp logia which is wet he is not like the other logia users just like how usopp's fire would have made ceasar's gas logia body explode if he not taken the oxygen out it to put the fire out.

Probably the gas effects only living things as it's, you know, gas. Unless it goes back to being the gelatinous blob known as Smiley.

apple's cannot breath in gas however this gas works better than that but i think that it only works on living things like humans/animals,ect even if the gas coated the apple's i don't think it would stop the devil fruit being eaten by the gas again.

It's logia. It's been stated many times it was logia. The gimmick of his ability is its more tangible than most but if you hit him without Haki, you simply sink into him.
